400 g sauerkraut, 100 g smoked bacon, 400 g cabbage,
5 g dried mushrooms, 200 g boned pork, 200 g boned veal, 30 g cooking oil, 250 g sausage, 50 g pork cracklings, 50 g onions, 10 g flour , salt, pepper and sugar
Chop the sauerkraut, add some boiling water, add the bacon and boil it together for an hour until soft. Wash the fresh cabbage, chop it finely, add some boiling water and boil it with chopped mushrooms in a separate saucepan for 30-40 minutes. Wash pork and veal, squeeze out excess water, sprinkle some salt on it and fry on a hot oil until browned on all sides. Put in the saucepan with sauerkraut in it and boil the meat for approximately 40 minutes. Then, take it out of the pan and cut into small cubes. Skin the sausage and slice it. Combine both cabbages together. Cut the pork fat into small cubes and fry in a frying pan. Add cracklings into the stew and use melted fat to fry the onion and add flour. Add chopped meat and sausage, mix it together adding salt, pepper and, if necessary, sugar. Mix it all into the stew and bring it all together to the boil once more
You can do all this using sauerkraut only instead of part fresh cabbage. The more different kind of meats and sausages added the better. Taste of the stew is highly enhanced by adding red wine. |
